Fat-free, sugar-free, weird chemicals-free strawberry cobbler bars!

This recipe is based loosely off this. However, I used pureed dates instead of the apple sauce and brown sugar, and strawberries instead of raspberries. 

Ingredients: 

-1.5 oat flour (grind old fashioned or quick oats in food processor)

-1/2 tsp baking powder

-1/4 tsp salt

-1/2-2/3 cup dates (i think I used a little more than half a cup of whole-pitted dates but I did not use all of the puree)

-equal amount of hot water as dates

-1.5 tsp cinnamon

-2 cups whole strawberries

-2 tbsp honey or agave

-2 tsp cornstarch

-1 tsp vanilla extract

 

Go: Preheat oven to 350 faranheit

1.Puree the dates and hot water in a blender. Blend until smooth

2. Mix puree, oat flour, cinnamon, salt, baking powder together in a bowl

3. grease an 8X8 baking pan with non-stick spray

4. take half the dough mixture and press into the pan making a thin layer. Took make this easier, I scooped half the mixture into the pan, then used a sheet a wax paper on top and pressed it with my hands to spread it evenly.

5. slice strawberries into thin slices, mix with honey, cornstarch, and vanilla.

6. spread mixture on top of the base in the pan

7. crumble the remaining dough mixture on top. If you want more coverage, sprinkle some more unground oats, granola, pumpkin seeds, etc. on top

8. Bake at 350 farenheit for 35 minutes.

9. Let cool and cut into 12 squares. 

Each square comes out to 76 calories.
